Almond Cherry Stuffed Chicken Breast

4 boneless skinless chicken breast
6 ounces Feta cheese
1/4 cup Cherry De-Lite dried cherries
1/2 cup chopped almonds
1/2 teaspoon lemon zest
1/4 teaspoon Kosher salt
1/8 teaspoon freshly ground pepper
1/2 cup coarse bread crumbs
1 large egg, lightly beaten
1 1/2 tablespoons olive oil
Preheat oven to 375º
Flatten chicken between waxed paper with the flat side of a meat mallet or a rolling pin; set aside.
Mix cheese, cherries, 1/4 cup almonds and lemon zest in a bowl. Place one fourth of the mixture at one end of each chicken breast and roll tucking in ends. Sprinkle with salt and pepper. Mix remaining almonds and bread crumbs mixture. Place in freezer on a plate for one hour. Dip each breast in egg, then roll all sides in bread crumb mixture. Place in freezer on a late for one hour.
Heat oil in a large ovenproof skillet over medium-high heat. Cook chicken until golden (6-8 minutes). Place skillet in oven and finish cooking until chicken is no longer pink, juices run clear and internal temp reaches 170º (about 20 min.)

Mix remaining almonds and bread crumbs mixture. Place in freezer on a plate for one hour. Dip each breast in egg, then roll all sides in bread crumb mixture. Place in freezer on a late for one hour.
