Carrots with Tart Cherry

Add a special touch to this side dish

1 pound carrots, peeled and sliced
1/2 cup Cherry De-Lite dried cherries
3 tbsp maple syrup
2 tbsp margarine
1/4 tsp ground nutmeg
1/4 tsp ground ginger

Cover and cook carrots in water in a 2-qt saucepan until tender, about 8 minutes.  Drain well.

Add remaining ingredients. Cook over medium heat, stirring occassionally, until mixture is hot and bubbly. Serve hot.  Refrigerate leftovers.
