Firecracker Salsa

Serve with chips
1/2 cup Cherry De-Lite dried cherries
1/2 cup Cherry De-Lite Cherry Preserves
2 tablespoons red wine vinegar
1/2 cup chopped red onion
1/2 cup chopped yellow bell pepper
1/4 cup chopped jalapeno pepper
1 tablespoon chopped fresh cilantro
1 teaspoon lime juice
Stir cherries, preserves and vinegar in a small microwave safe bowl until well blended. Microwave on high until hot, about 1 1/2 minutes. Let stand 5 minutes.
Stir in remaining ingredients. Cover and refrigerate at least 4 hours before serving.
Store in refrigerator.
Makes about 1 1/2 cups
